Chipped Beef on Toast – Also Known as SOS
Ingredients:
- 2 TBS butter
- 2 TBS flour
- 2½ cups milk
- One 8-ounce jar of chipped beef
- Four slices of toast (any kind)

Directions:
Start by toasting your bread. Next chop your chipped beef or any meat you have in your fridge or freezer. Heat a frying pan over medium heat and melt the butter. Once the butter is melted, whisk in the flour, stirring constantly until the mixture is smooth (about 1-2 minutes). Gradually add the milk while continuing to whisk to prevent lumps from forming. Cook the mixture until the sauce thickens and begins to bubble (about 5-7 minutes). Add in the chipped beef and stir. Lastly, pour the beef sauce over your toast and enjoy! 😋

SOS is a tasty, fun and easy meal that can be enjoyed for breakfast, lunch or dinner with family and friends. Even if you don’t have all the ingredients on hand, it’s a flexible recipe that can be easily adapted with what you have available. After all, the military probably didn’t make it the same way twice. For example, when I used to make SOS with my grandfather, we always added onions, mushrooms and sometimes peas for extra flavor.

Although we never made SOS the same way twice, it was always a tasty and creative way to clean out the fridge. This recipe was a must-have whenever Grandpa came to visit. He learned his cooking skills in the Marines during World War II where he was a Corsair airplane mechanic and in the Korean War where he trained helicopter pilots. He wasn’t much of a cook, but he loved making quick, easy meals with his grandkids. Whether it was SOS, his famous scrambled eggs or Spam with beans, his simple recipes were always enjoyed by his beloved grandkids.
